Recipes from Mountain Mary

Come On Spring!

1 cup real bacon bits
3 to 4 ribs of chopped celery
2 heads of chopped broccoli, florets only
˝ cup chopped green onions
1 cup seedless green grapes
1 cup seedless red grapes
˝ cup raisins or dried cranberries
˝ cup slivered almonds

Mix all ingredients together and refrigerate until ready to use. Serve with Orange Mayo dressing.

Orange Mayo Dressing  

1 cup mayonnaise
1 cup orange juice concentrate
Milk

Mix mayonnaise and orange juice concentrate in a bowl until well blended. Add milk until the dressing is the consistency you desire. NOTE: This dressing is best if prepared at least several hours in advance.

Nutty Carrot Sandwiches  

6 large carrots, grated
1 Tablespoon garlic, minced
1 cup pecans, ground or chopped
15 stuffed green olives, minced
Mayonnaise  

In a bowl, combine all ingredients with enough mayonnaise to hold the mixture together. Fill sandwiches or use to top party bread.
